“I fell in love with just the entrepreneurial spirit of that and really this idea of a third place. It’s not your home. It’s not your office. It’s this third place where you can spend time for yourself,” Kim explained, reflecting on her time at Starbucks.

Despite knowing the challenges of small business ownership firsthand—her father had faced bankruptcy running a small business—Kim persisted. While many successful ventures start with a well-thought-out business plan, Salt & Straw’s expansion was, in Kim’s words, “unintentional” and “natural.” Opening the first shop required Kim to cash in her 401k, sell her house, and max out credit cards, highlighting the sheer determination that fueled her entrepreneurial journey.

Despite facing financial challenges, Kim’s vision and the overwhelming support from the community made expansion a reality. Salt & Straw’s growth became a collaborative effort between Portland and the new locations, emphasizing the importance of maintaining brand identity while embracing local culture.
